Lipase from porcine pancreas has been used:for the analysis of fatty acid at the 2-position of triglycerides.to determine the indigestible fraction of plant source that is resistant to the action of digestive enzymes.as a component of dissolution media to study the dissolution profiles of theophylline.

Biochem/physiol Actions

Lipases catalyze the hydrolysis of esters in aqueous solutions and the synthesis of esters in non-aqueous solutions. They also produce hydroxyl and carboxylic groups through the hydrolysis of ester linkages in poly(ethylene terephthalate).Lipases catalyze the hydrolysis of triacylglycerols into glycerol and free fatty acids.
